Chicken with lemon mustard sauce

 

You will need:

3 whole chicken breasts( rinsed, skinned, boned, and cut in half), salt, ground pepper, 1 1/2 cups light cream, 4 tsp. coarse-grained "country" or "Parisian" -style mustard, 2 tbs. lemon marmalade, 1/8 tsp. cayenne, 2 tbs. butter, 1 tbs. vegetable oil, 1 tbs. finely minced chives, parsley, or sliced green tops of scallions for garnish.

Season chicken with salt and pepper. In a bowl whisk cream with, mustard, marmalade, and cayenne. Melt butter and oil and saute 'chicken over medium heat, for 30 seconds on both sides.

 

Reduce heat and add cream mixture. Cook over medium heat, gently simmering, until sauce is thick and chicken is cooked and tender. Sprinkle with chives, parsley and scallions before serving and serve immediately with puree' potatoes or white long grain rice.
