Chive spoon bread

The chive spoon bread recipe is great when served with grilled or roasted chicken.

You will need:

1 cup milk, 3 tbs. melted butter or margarine, 1/3 cup white cornmeal, 1 tsp. baking powder, 1 tsp. sugar, 1/4 tsp. salt, 2 well beaten eggs, 3 tbs. chopped chives.

Preheat oven to 350 degrees. Combine milk and butter in a bowl. Stir in cornmeal, baking powder, sugar, and salt. Mix well beaten eggs & chives with all other ingredients. until well blended.

 

Pour batter into greased casserole dish and bake 30 to 40 minutes. Bread is done when a wooden pick inserted near the center comes out clean. Let stand for about 5 minutes, then serve at once with your choice of grilled or roasted chicken, sausage, grilled meat balls or oriental kofta.

Note: You can substitute butter with 2 tbs. of oil for a lighter version of this chive bread recipe.
