Fajitas recipe: easy steak or chicken fajitas

Fajita is a famous mexican meal, that delicious Tex Mex cuisine. Fajita is grilled beef or chicken strips served on corn tortilla and assorted with a mix of grilled onions, bell peppers and chili pepper. Fajitas are also served with some extra additions like; sour cream, guacamole, pico de gallo, tomatoes and shredded cheese.

Fillet steak or chicken breasts, 1 large onion sliced, 2 large colored bell peppers. For the marinade use the following:

1 lemon or lime juice, 2 Tablespoons of olive oil, 2 cloves minced garlic, 1/2 teaspoon ground cumin, 1/2 fresh Jalapeno pepper, seeded, ribs removed, finely chopped (be careful not to touch your eyes or anywhere near your eyes after handling a Jalapeno pepper!) (optional), 1/4 cup chopped fresh cilantro.

Fajitas recipe: chicken fajitas and beef fajitas!

Mix all marinade ingredients. Set the steak or chicken breast in the marinade and let it sit at least an hour or overnight for better taste.

In a pan or griddle, add a teaspoon of olive oil, then add the steak, grill steak on each side till desired doneness. Remove from pan and let sit for 5 minutes.

Reduce the pan heat to medium high. Add a little more oil to the pan if necessary. Add the onions, bell peppers. Cook, stirring frequently, for 5 minutes, until the onions are slightly translucent.

Slice steak into thin slices and serve immediately with shredded swiss or cheddar cheese, sour cream & guacamole and warm flour tortillas.

Chicken or beef Fajita Marinade

  • 1/3 cup fresh lime juice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon chopped cilantro
  • 1/2 teaspoon ground cumin
  • salt to taste

prepare the marinade, stir together, lime juice, olive oil, garlic, brown sugar, Worcestershire sauce, cilantro, cumin, and salt; mix well. Then pour on chicken until chicken is well coated. Marinate for 1 to 3 hours or overnight placed in refrigerator.

Do the same steps of grilling the chicken breast and vegetables, cut chicken breasts in slices, place in tortilla bread with shredded cheese, lettuce, sour cream, tomato cubes, pico de gallo and guacamole.
