Garlic green beans with tomato and grilled pepper

Nice, fast and easy recipe for making a vegetable dish that your family will love.

You will need:

1pound green beans, 1 tbs. olive oil, 1 minced garlic clove, 1 tomato peeled and chopped, 1 tbs. white-wine vinegar, salt, pepper to taste, grilled colored bell pepper slices, celery stick.

Steam or boil the green beans 3 to 5 minutes till crisp-tender. Do not over cook vegetables.

 

Heat oil in saute' pan over medium high heat. Add garlic, saute' for 1 more minute then add remaining ingredients. Add chopped celery stick and slices of grilled colored pepper (yellow or red bell pepper) Stir all together over heat till ingredients mix well and serve.

Note: To keep the green fresh color of vegetables do not cover the pan while cooking. After boiling your vegetable you can rinse the vegetables with cold or iced water. That way you will keep the fresh green color of the vegetables.
