Gingerbread cake recipe

A yummy gingerbread cake that is also a non-cholestrol dessert.

You will need:

1/3 cup vegetable oil, 1/3 cup water, 1/3 cup light molasses, 1/3 cup sugar, 2 egg whites lightly beaten, 1 cup all-purpose flour, 1/4 tsp salt, 1/4 tsp baking soda, 1 tsp baking powder, 1 tbs ground ginger, 2 tsp ground cinnamon, 1/2 tsp ground nutmeg.

 
 

Preheat oven to 350 degrees. Combine oil, water, molasses, sugar, and egg whites. Stir until well mixed or use food processor if you need. Then mix flour, salt, baking soda, baking powder, and spices in a small bowl.

 

Add to liquid mixture and combine gingerbread cake mixture well until smooth. Pour the gingerbread cake mixture into greased baking pan (8-inch square baking pan). Bake for about 30 minutes or until surface springs back when touched slightly.

 

Sprinkle with confectioner's sugar and serve. Serves 4 to 6.
