2 ripe avocados, 1/2 lemon juice, 1/2 red chopped onion, salt, pepper, chili pepper cut and seeds removed (optional), tablespoon olive oil (optional), 2 tablespoons cilantro leaves, finely chopped, 1/2 tomato, seeds and pulp removed, chopped .
Cut avocados into halves. Remove seed. Scoop out avocado from the peel, put into a bowl. Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers.
Keep the tomatoes separate until ready to serve. Cover & refrigerate. Just before serving, add the chopped tomato to the guacamole and mix.
You can add sour cream, mayonnaise or cream cheese to the guacamole dip for extra rich flavor and taste.
