Meal in minutes: Low calories healthy potato salad recipe with light crispy chicken fingers

Love fried chicken with rich creamy potato salad, but afraid of gaining weight?! Here is a super easy healthy recipe for potato salad and crispy chicken fingers in low calories. Our version of low calories meal will satisfy your appetite for creamy potato salad or deep fried chicken with great taste and at the same time in a lighter and healthier way.

For our healthy potato salad recipe you will need: 6 medium potatoes, cooked, peeled and cubed, 4 scallions cut in circles, 1 ripe avocado cut in cubes.

Dressing: 3 lemon juice, 1 tbs olive oil, salt and pepper to taste, tsp. of mustard, pinch of dried thyme, 1 1/2 tbs. honey.

Healthy crispy chicken meal.

Prepare dressing by adding all ingredients and stir to mix dressing well. Add chopped scallions, stir to coat well in the salad dressing. Then add cooked potato cubes and stir in dressing to make sure that your light healthy potato dressing covered your salad, finally add the avocado and stir together, then chill in refrigerator for some hours.

Light potato salad variation:

For a creamy yet healthy flavor for your potato salad, mix 1 can of yogurt season with salt, pinch of pepper, fresh chopped mint, scallions or chives. Serve with your healthy light potato salad.

 

Healthy light crispy chicken fingers:

Marinate chicken fingers in butter milk seasoned with salt, pepper, paprika and rosemary. Keep overnight or for several hours.

In a plastic bag crush corn flakes well till smooth then roll in chicken fingers, coat well with crushed corn flakes from all sides. Spray oven tray with oil to avoid stickiness then place your light version of crispy chicken finger in oven for 10 to 15 minutes or until golden.

Serve with the healthy light potato salad and enjoy a fun meal in low calories.
