In a large bowl, combine potatoes, onion and your choice of parsley, dill or chives. In a separate bowl, combine remaining ingredients. Pour over potatoes and mix well. Refrigerate at least 1 hour before serving. This potato salad can be prepared a day ahead.
You can also try this dressing for your potato salad. Mix 1 cup mayonnaise with 3 tsp. sugar, and stir in some milk till you get a creamy smooth dressing and pour over your potato salad.
Potato salad variations: You can add your choice of canned tuna chunks (after draining all oils from it), or hard boiled eggs, hot dogs, corn, caper or sweet pickle to the potato salad for a full healthy dinner in week days or as a fulfilling snack at work. |
