Risotto recipe

Risotto recipe with seafood. Risotto required patience and several trials. This is an easy risotto recipe that anybody can do. Hope you like it. The trick is to keep stirring your risotto while cooking to get best results out of this risotto recipe.

You will need:

1 cup chopped onion, 1 cup chopped celery, garlic, butter, 250 gm. risotto rice (short grain rice), seafood (scallops, or shrimps), 1 lemon, 3 to 4 cups soup or till rice is tender, sage and rosemary (optional), 2 cups cream.

In a pan add butter with some oil, then add chopped onions, celery and garlic. Stir together till they mix well.

 

Add rice to the previous ingredients and keep stirring. Then pour hot chicken soup a little by little while stirring the risotto. Continue this process without stopping stirring the risotto till risotto absorbs all the soup. This might take from 5 to 10 minutes.

 

Finally add fresh chopped sage and rosemary for more flavor. Then lemon zest and lemon juice all this while stirring. Add cream while stirring the risotto. Then place on low heat and stir well.

In different pan, saute scallops or shrimps in butter, add salt and pepper. Then add them to risotto. Serve immediately.
